Sound like an oxymoron? This creamed spinach packs great flavor and a creamy texture all without any animal products. I use it on my Spanikopita Pizza (click for recipe).

1/2 Tbsp EVOO
1 Tbsp vegan butter
2 Tbsp veggie broth
1/2 onion, chopped a bit less than roughly
1 garlic clove, minced
10 oz spinach (trimmed and washed thoroughly if fresh or slightly defrosted and squeezed of a bit of water if frozen)
1/2 cup soy milk (plain not flavored)
1/4 tsp nutmeg and SnP
1 tsp dried dill weed
1. Heat EVOO, butter and broth over medium-low heat. Add chopped onion and garlic and saute for 5 minutes.
2. Turn up heat to medium and add thoroughly cleaned spinach. Continue to stir while it wilts down.
3. Cook over medium heat for 10 minutes while liquid evaporates.
4. Add soy milk and spices and cook another 10 minutes over medium-low heat or until desired thickness.

OHHHH!!! Okay thank you! I hope this turns out yummy. I'm excited. So hard to find vegan recipes online. Been trying to find a spinach souffle. Hard because of the egg in normal SS.
