Summer peppers are here in every color and heat! I've been enjoying a similar version of this dish at Bistro 33 in Davis. If you can't find shishito peppers, other mild peppers you might try are anaheim, banana, gypsy, cherry or cubanelle. They all are significantly lower on the Scoville scale than a jalapeño. An easy go-to appetizer all summer long...

Ingredients

  • 2 Tbsp good quality EVOO
  • 1 lb mini/bite-sized sweet peppers, preferably shishito
  • 1 tsp kosher or sea salt
  • 1/2 lemon, juiced

Preparation

  1. Preheat EVOO in a large skillet over medium-high heat until the oil just starts to smoke.
  2. Immediately toss in the peppers and stand back a bit to avoid getting splashed with hot oil. Constantly toss the peppers around with tongs to darken all sides, about 3-5 minutes.
  3. Remove to a serving bowl and toss with salt and lemon juice.
