Ingredients

  • 2 Tbsp good quality EVOO
  • 1 lb mini/bite-sized sweet peppers, preferably shishito
  • 1 tsp kosher or sea salt
  • 1/2 lemon, juiced

Preparation

  1. Preheat EVOO in a large skillet over medium-high heat until the oil just starts to smoke.
  2. Immediately toss in the peppers and stand back a bit to avoid getting splashed with hot oil. Constantly toss the peppers around with tongs to darken all sides, about 3-5 minutes.
  3. Remove to a serving bowl and toss with salt and lemon juice.
