Ingredients
1 lb kohlrabi, peeled and grated
1/2 lb carrots, peeled and grated
1/2 onion, peeled and grated
1 medium apple, grated
1/4 cup minced parsley
1/2 cup mayonnaise
2 Tbsp cider vinegar
1 Tbsp sugar
1 Tbsp celery salt
2 tsp dijon mustard
2 tsp dry mustard
2 tsp smoked paprika
Preparation
Combine the kohlrabi, carrots, onion, apple and parsley in a large bowl. If there is a lot of liquid in the bowl, briefly drain the veggie mixture in a colander.
In a small bowl, whisk together the mayo, vinegar, sugar, celery salt, dijon, dry mustard and smoked paprika. Spoon over the veggie mixture and toss well. Serve immediately or let marry overnight for even better flavor.
